Citrus Miso Dressing
Complements any salad greens. Makes about 6 oz.
- 1 lemon, juice and pulp
- 1 clementine or 1/2 orange, juiced
- 1 tbsp raw honey (or rice syrup, raw agave nectar) or 1 pkt stevia
- 1/2 cup oil, extra virgin olive
- 1 tbsp miso, brown, unpasteurized
Mix all ingredients well. Add to salad when serving.
Here's some info on the parts the ingredients play in this dressing. The liquid sweeteners sweeten the lemon and thicken as well. The oil adds body and omega 3s. The salt adds iodine and brings out the flavors; the miso is also salty, but also adds color and body and its own unique flavor.
