Liver Pâté

Chicken livers are inexpensive, nutritious, and amazing prepared this way!  Serves several.

Ingredients

  • 1 lb. chicken livers, free-range if possible
  • 1 onion
  • 1 clove garlic
  • 1/2 c butter
  • 2 tsp mustard powder or prepared mustard
  • 1/4 tsp nutmeg, cloves, cayenne, curry, thyme, salt, pepper
  • 1/2 c cream

Directions

Chop onion.  Fry livers with onion and bay leaf in oil on low heat, stirring.  Chop garlic.

When livers are done, remove bay leaf and put all ingredients in blender until smooth.  Serve chilled as a spread or dip with bread, crackers, or chips.
