Quick Miso Soup
Ready in 5...try it in place of a cup of tea! Serves 1.
- 1 cup water
- 1 tbsp miso
- 1 tbsp ginger
- 1 slice organic onion
- 2 tbsps sweetener (raw agave nectar, organic brown rice syrup, etc.)
- 2 tbsps organic oil
- 1 tbsp wakame or other dried sea vegetable
- 1 oz. diced fish or tofu
While bringing water to a boil, cut the onion slice into smallish pieces. Add them to the boiling water, then turn off the heat. Add the rest of the ingredients and stir. The sea vegetable will rehydrate quickly.
Without the oil and sweetener, the taste will be saltier and a bit sharp because of the ginger and miso...but you can certainly enjoy it that way if it's more to your liking.
The optional sea vegetable, fish, or tofu will add substance to the soup, making it more of a meal item than simply a hearty replacement for a cup of tea.
