Cinnamon Lemon Dressing

Wonderfully tart and sweet!  Serves 2.

Ingredients

  • 1 lemon, juice and pulp
  • 1 tbsp raw honey
  • 1 tbsp xylitol
  • 1 tbsp oil, extra virgin olive
  • 1/2 tsp cinnamon
  • 1 pinch salt

Directions

Combine the ingredients separately so the sweeteners dissolve in the lemon juice.  Add to salad when serving.

Uses

This is a sweet dressing, but adding fruit to the salad is totally optional.  I've used it on a simple lettuce/cucumber/sprouts salad and it was wonderful...sort of a salad and dessert in one!  For that reason, may be best served after the entree rather than before, but then, as they say, "life is short—eat dessert first."

Some Analysis

Here's some info on the parts the ingredients play in this dressing.  The honey not only sweetens the lemon but thickens as well.  The xylitol adds more sweetness without raising the glycemic index.  The oil adds body and omega 3s.  The salt adds iodine and brings out the flavors (you can put more on the salad as well).  Cinnamon is also a healthful spice.
