Eggs Avocado
Great for breakfast; easy and delicious! Serve with toast or as a sandwich spread. Serves 1 or 2.
Ingredients
- 2 eggs
- 1 avocado
- 1 tbsp hot sauce (such as Frank's (site)) or tsp cayenne pepper and dash garlic powder
- Dash lemon juice
- 1/2 tsp Real Salt (site) or sea salt
- Pepper to taste
Directions
Boil the eggs for 4 minutes...the yolk is more nutritious soft. Scoop the avocado out of its skin with a spoon into a bowl. Remove the eggs from the heat and replace the hot water with cold to stop cooking. Peel and add the cooked eggs and mix and mash with a fork. Add the other ingredients and mix well.
You can add more hot sauce if you're a big fan, but you really just want the sauce's flavor to enhance, not take over. You'll be surprised at how delicious this is!
Notes on Avocados
Don't be afraid of avocados, even if you're dieting. Their fat content is high for a vegetable, but vegetable fat is better in many ways than meat fat. Avocados...full of vitamins, minerals, antioxidants, fiber; low in sugar, cholesterol, and carbohydrates...are definitely worth eating!
