Liver Pâté
Chicken livers are inexpensive, nutritious, and amazing prepared this way! Serves several depending on appetites.
Ingredients
- 1 lb. chicken livers, free-range if possible
- 1 onion
- 3 tbsp olive oil
- 1 clove garlic
- 1/2 c butter
- 2 tsp mustard powder or prepared mustard
- 1/4 tsp each nutmeg, cloves, cayenne, curry, thyme
- 1 bay leaf
- Salt and pepper, to taste
- 1/2 c cream
Directions
Chop onion. Fry livers with onion and bay leaf in oil on low heat, stirring occasionally. Chop garlic. Put the rest of the ingredients into a blender.
When livers are done, remove bay leaf and add to blender. Blend until smooth. It will pour easily into a storage container and thicken when chilled.
Serve chilled as a spread or dip with bread, crackers, or chips...or spread it yourself to make hors d'oeuvres.
