Liver Pâté

Chicken livers are inexpensive, nutritious, and amazing prepared this way!  Serves several depending on appetites.


  • 1 lb. chicken livers, free-range if possible
  • 1 onion
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1/2 c butter
  • 2 tsp mustard powder or prepared mustard
  • 1/4 tsp each nutmeg, cloves, cayenne, curry, thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1/2 c cream


Chop onion.  Fry livers with onion and bay leaf in oil on low heat, stirring occasionally.  Chop garlic.  Put the rest of the ingredients into a blender.

When livers are done, remove bay leaf and add to blender.  Blend until smooth.  It will pour easily into a storage container and thicken when chilled.

Serve chilled as a spread or dip with bread, crackers, or chips...or spread it yourself to make hors d'oeuvres.
