Flavorful! Serves 2 to 4.
- 1/2 cup quinoa (rinsed if not pre-rinsed)
- 1 1/2 tbsp. oil
- 1/4 onion, diced
- 1 tsp. ginger root, grated fresh if possible
- 1 heaping tsp. turmeric
- 1 heaping tsp. coriander (or curry powder)
- 1/4 tsp. ground cinnamon
- 3/4 cup water
- 1/3 cup peas, fresh or frozen
Sauté onions in oil in a heavy saucepan on medium high heat for 4 or 5 minutes.
Add the spices and quinoa. barely simmer 5 minutes. (Note: I tried adding the water with the quinoa, but the quinoa didn't pick up the flavor of the spices, so the taste was very weak.)
Add the water, cover, and barely simmer for 10 minutes or until all the water is absorbed, stirring occasionally.
Stir in peas and cook for 5 minutes so the peas are tender and thawed and any additional water has been absorbed.
